La Reine de Saba sans Gluten et sans Lactose
Temps de préparation : 15 minutes
Temps de cuisson : 30 minutes à 180°C
Pour environ : 8 gourmands
Ingrédients :
• 250 g de chocolat noir Bio
• 120 g de margarine végétale Bio sans Lactose ou huile de coco si vous préférez
• 240 g de sucre Bio
• 6 œufs Bio
• 1 sachet de levure sans gluten Bio (facultatif)
• 60 g de fécule
• 150 g d’amandes en poudre BIO
• 1 pincée de sel
• sucre glace pour le décor
La recette :
Faites fondre votre chocolat cassé en morceaux au bain-mari. Lorsqu’il est déjà bien fondu, ajoutez la matière grasse et remuez bien. Clarifiez vos œufs et blanchissez les jaunes avec le sucre.
Incorporez ensuite à votre préparation la fécule, la levure puis les amandes.
Notre astuce : nous mixons nous-mêmes des amandes effilées (ou entières émondées) afin que la poudre ne soit pas trop fine, c’est meilleur.
Il ne vous reste plus qu’à ajouter le mélange beurre/chocolat et à monter vos blancs en neige avec la pincée de sel.
Mélangez tout d’abord à la maryse un tiers de vos blancs pour alléger le mélange, puis incorporez le reste bien délicatement.
Chemisez votre moule, versez votre préparation et enfournez à 180°(th6) pour 30 minutes, un peu moins si vous préférez un cœur plus fondant.
Démoulez et saupoudrez d’un nuage de sucre glace lorsque votre Reine de Saba est refroidie.
Une bonne odeur de chocolat embaume toute la maison. Ce gâteau est un régal, il se conserve très bien et peu même se préparer la veille.
